Crock Pot Cream Cheese Chicken Chili

I have been meaning to post this recipe for months and just now getting around to it. This recipe for crock pot cream cheese chicken chili is so so so good... you have to make it! 


This is one of the easiest chili recipes I have found... you just through everything in the crock pot and let it cook for the day. This recipe goes perfect with cornbread and is great for a crowd or lots of leftovers. I always make a double batch because we just can't get enough of it. Enjoy!

Birthday Party Menu - Soup and Chili Bar

With the birthday party only a few days away, I have some cooking to plan for on Saturday morning. These two recipes for our soup and chili bar are tried and true favorites and have been requested to be made again by my husband. And since he is the birthday guy, I am happy to make him his favorites. I have made both of these recipes several times and love them both! And they are recipes that are fairly easy to throw together and only get better the longer they sit and the flavors meld together. The chili recipe I will be making is Cincinnati Skyline Chili and I adapt this recipe to just be the chili and leave out the pasta part. The flavors are great and this recipe is so hearty for the cool Fall weather that has arrived.

The other soup recipe that I will be making for the party is Chicken Tortilla Soup. This soup is flavorful and fun to dress up with all of the fixings. My favorite part about this soup is how much flavor the chicken has and topping my bowl with lots of crunchy corn tortilla strips and a big dollop of sour cream.

Birthday Dinner - Cincinnati Chili

Last night I made this delicious chili recipe for my husband's birthday dinner. We had a complete chili and baked potato bar for everyone to dish up and garnish with all of the fixings. This Cincinnati Skyline Chili recipe is from the blog What's Cooking, Chicago? and has been a huge hit in my family for a couple of years. This chili is always a hit with a crowd and perfect for Fall comfort food. The recipe calls for serving it with spaghetti, but we usually skip that part (we are more of the spaghetti and marina crowd than putting pasta in chili)... but otherwise the recipe is spot on! Cooking with My Dad

This weekend my Dad is visiting from Salt Lake and we always have a tradition of cooking dinner together. With the fall weather here, we wanted to try a new chili recipe and ended up making White Bean Chicken Chili from the Taste of Home website. It was delicious and so easy! Of course we couldn't have dinner without dessert, so I just finished making us Pumpkin Whoopie Pies from Rachael Ray's magazine... oh my, they were amazing!
I love spending time with my dad as we cook together, watch football, and just enjoy each others' company. The perfect way to spend a Saturday!
